Figs are a hot trend. This simple, elegant main pairs our fig Memories sauce with pork tenderloin.

1 pork tenderloin, about 12 oz/375 g
2 tsp (10 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1/4 tsp (1 mL) each salt & freshly ground black pepper
1/2 cup (125 mL) PC MEMORIES OF Tuscany Balsamic Vinegar & Fig Sauce


  1. Preheat barbecue to medium heat.
  2. Rub tenderloin with oil. Sprinkle with salt and pepper. Place on greased grill. Close lid. Cook for 13 to 15 minutes, turning occasionally, or until cooked through. Leave on grill. Set 1/4 cup (50 mL) Memories sauce aside. Cook tenderloin 2 minutes longer, using remaining Memories sauce to brush over tenderloin frequently. Tent tenderloin with foil. Let rest 10 minutes.
  3. Slice pork thinly. Place on serving platter. Drizzle with reserved Memories sauce. Garnish with fresh figs and parsley sprigs, if desired.
